June 16 Crispy Chocolate Log10 oz. large marshmallows
1/4 cup butter
1/4 cup peanut butter
5 1/2 cups rice krispies
1 1/3 cup chocolate chips
3/4 cup butterscotch chips
Line 15x10 pan with greased wax paper. In large microwave safe bowl combine butter, peanut butter, and marshmallows. Cover & microwave on high for 2 minutes. Stir till blended. Stir in cereal. Spread into pan. In microwave safe bowl combine the chips. Microwave uncovered for 2 minutes or till melted. Stir and cool for 5 minutes. Spread over cereal to within 1 inch of edges. Roll up jelly-roll style starting with long edge for smaller treats or short end for larger treats. Peel away wax paper while rolling. Place seeam side down in refrigerator for about 2 hours. Cut into slices. YUMMY and EASY!!! June 12 Fiesta! with Our Lady of GuadalupeI can't believe it is Friday already! This week of Vacation Bible School has flown by! I'm quite sure it was just Monday yesterday! We had a great time at VBS and tonight we will have our PotLuck and program and FIESTA! We made maracas, sombreros, tilmas with Our Lady of Guadalupe's picture on them, God's Eyes, and giant tissue paper flowers. We had a baby shower and collected items to donate to a crisis pregnancy center. We watched an animated video about Our Lady of Guadalupe as well as Horton Hears a Who...very pro life movie! Since Mary was pregnant when she appeared to Juan Diego, she is the patronnes of the unborn. We had some yummy snacks this week too: chips & homemade salsa (thank you Tammy!) & sangria (made with grape juice, orange juice, and sour); mints, nuts, cheese & crackers, pretzels & sherbet punch for our baby shower; hot chocolate with cinnamon (wow was that ever tasty!) & corn muffins; cheese quesadillas; and roses in the dessert (frosting roses on a graham cracker).
My daughter is making these brownies for tonight. We have never made them before, but most of us are experimenting for tonight, trying to make lots of Mexican dishes to keep with the theme. The children will be singing 2 songs in Spanish tonight. They also learned how to make the Sign of the Cross in Spanish. I think everyone had a lot of fun!
Mexican Cinnamon Brownies
3 oz. unsweetened chocolate squares
1/2 cup butter
3 eggs
1 cup sugar
3/4 cup brown sugar
1 1/2 tsp vanilla
3/4 cup flour
1/2 tsp baking powder
1/4 tsp salt
1/2 tsp cinnamon
1 cup chopped pecans (optional)
Melt chocolate squares and butter in saucepan or microwave. Let cool 15 minutes. Heat oven to 350. Whisk eggs till foamy, then add sugars and vanilla and whisk till combined. Stir in chocolate till thoroughly combined. Stir together flour, baking powder, salt and cinnamon. Add to egg and sugar mixture and beat till smooth. Fold in pecans. Pour into 13x9 pan and bake for 25 to 30 minutes or till knife inserted in center comes out clean.
June 09 I'm still here!It's been awhile since I've blogged. Seem to be on Facebook too much wasting time though! I really prefer blogging, but a bunch of my friends are on Facebook & it's all the rage you know! Summer is here...well sorda...the weather has been quite cool, but at least we don't have to run the A/C. I'm tempted to turn the furnace back on though! We received a fair amount of rain over the weekend which we needed desperately. School is out for the summer. I jumped right into getting ready for Vacation Bible School. It is in full swing this week. Then I have to get busy & deep clean & declutter the house..sigh...hope I have the energy & ambition because I REALLY need to accomplish that! Some movitivation will be that I can move some things to my new classroom May 01 ConversionsI just had an incredible revelation this morning while I was praying with my Magnificat Magazine. The readings for this morning's Mass (May 1) were on the conversion of St. Paul. Before he became Paul, he was Saul...persecutor of Christians...he even watched as the first martyr, St. Stephan, was stoned. Then he had an incredible life-changing, conversion experience. Pope Benedict, in his infinite wisdom, has proclaimed June 29, 2008 to June 29, 2009 to be the Year of St. Paul. What did he know in June of 2008 that we didn't??? We need to pray to St. Paul for his intercession...that the leaders of our country, especially our president, will have an incredible conversion experience just like St. Paul did. If it can happen to Saul it can happen to Obama as well! "Pray, pray a great deal....many souls go to hell because there is no one to pray and make sacrifices for them." (Our Lady of Fatima) April 02 Living Rosary AssociationThe Living Rosary Association has a lovely new website! This is such a neat organization! When you join you promise to pray just one decade of the Rosary each day (they assign a decade to you) and you share in the graces of all of the members...that's thousands of Rosaries each day! March 20 Little Piece of HeavenThis recipe has been called many other things...but I don't see anything delicious or good about them, so I renamed it
1 package fudge brownie mix
16 oz Cool Whip
1 pkg vanilla instant pudding (I used a small pkg but I'm thinking a large one might be better?)
1 serving instant mocha coffee (like GF International Coffee - 2 servings might be better)
4-5 Heath bars, crushed -OR- peanut butter cups, crumbled (didn't try this, but my hubby thinks it would be better that way!)
Mini chocolate chips (if you like extra chocolate)
Make brownies according to recipe on box. Bake in 11x17 pan (half sheet). I baked in 9x13 and just cut the pieces a little smaller than they say to & it worked fine. Let brownies cool. Make vanilla pudding according to package directions. Dissolve instant mocha in less than 1/4 cup hot water and add to pudding. Fold Cool Whip into pudding mixture. Cut brownies into 1" squares. Layer 1/3 of brownies into serving bowl. Spread 1/3 of cream mixture over brownies. Top with 1/3 of toffee bits and mini chips. Repeat layers twice more for three layers of HEAVEN! Chill and serve...enjoy! This is actually better if made the night before so the flavors can meld

Special meals/treats: build your own sundae (provide ice cream and lots of different toppings for everyone to pick from); have cheese cubes & pretzel sticks for a snack & let the children build something with them before they eat; build your own English muffin pizza or mini pizzas from homemade dough or frozen dough balls from Sam’s Club (put sauce on the English muffin or dough & have lots of different toppings for everyone to pick from)
Listen to a story about St. Joseph on CD, like the one available from Catholic World Mission (www.catholicworldmission.org). They have lots of great saint stories on CD and have coloring books to go with them. The especially great part is that the proceeds go to help the missions! You can listen to parts of the stories online. They also have some sample coloring pages. March 06 FireproofIf you have not seen the movie "Fireproof" yet I HIGHLY recommend it! We watched it with some friends & it was wonderful! Except for Kirk Cameron, all of the actors are volunteers from a church down south & they did a terrific job. So impressive & needed right now...a great 'marriage is forever' message...don't ever leave your partner behind, especially in a fire! Awesome experience!We went to Mass this morning at a neighboring parish where the pastor just put the Communion rail back in place & is encouraging people to receive Holy Communion kneeling at the Communion rail...awesome experience! You KNOW that you are receiving SOMEONE SPECIAL...gives you new awe and reverence for the Sacrament! This is not just a piece of bread but Truly the Body & Blood of Jesus our Lord! On my thankful list tonight will be: being able to receive Jesus at the Communion rail and for Fr. Fulton! March 05 St. Patrick's DaySt. Patrick’s Day Activities/Recipes – March 17 Make everything green for your meals! You can mix green food coloring with mashed potatoes, milk, pancake batter, and lots of other things...use your imagination!
Drink idea: Mix lime sherbet with 7Up or sour for a yummy green drink. Call it Leprechaun Fizz!
Make cloverleaf rolls (rolls with 3 ‘bumps’) since St. Patrick taught about the Trinity.
Potato Soup 32 oz. frozen hash browns (thawed or partially thawed) 4 T butter 3-4 stalks celery, chopped (optional) 1 cup onion, chopped (optional) 1 can chicken broth (or 1 cup hot water & 1 chicken bouillon cube) 1 can cream of celery soup 1 can cream of chicken soup 2 cups milk Salt & pepper to taste
In a soup pot, sauté fresh celery, onions, salt and pepper in 4T butter till tender crisp. Add potatoes, broth and water to celery mixture, stirring over high heat. When mixture comes to a boil, cover and reduce heat. Simmer for 30 minutes. Stir in soups, milk, salt, pepper and heat till hot, stirring occasionally. You may serve with cheddar cheese, bacon, and parsley if desired.
Irish Soda Bread 3 c flour ¾ tsp salt ½ c sugar 1 tsp baking soda 2 tsp baking powder ¼ tsp cream of tarter 1/3 c butter, softened but not melted 1 to 1 ½ c buttermilk ½ box raisins (optional)
Glaze: ¼ c powdered sugar and 2-3 T milk
Mix dry ingredients, cut in butter. Add raisins if using and buttermilk, stir till moist. The dough will be sticky. Flour your hands and shape dough into a ball. Knead for 15 seconds on a lightly floured board. Place on a lightly greased baking sheet. Flatten to about 10 inches in diameter. Using a serrated knife, but a deep cross in the top of the loaf as you say “God bless this family in the name of the Father, the Son, and the Holy Spirit. Amen.” Bake at 350 degrees for 45-50 minutes. For glaze, combine sugar and milk. Stir till thick and syrupy. Brush on warm bread.
St. Patrick’s Day Cupcakes 1 ¾ c flour 4 serving sz instant pistachio pudding mix ¾ c mini chocolate chips 2/3 c sugar 2 ½ tsp baking powder ½ tsp salt 2 beaten eggs 1 ¼ c milk ½ c oil 1 tsp vanilla or ¼ tsp almond Line muffin cups with paper liners & spray with non-stick cooking spray. In large mixing bowl, stir together flour, pudding mix, chocolate chips, sugar, baking powder & salt. Add beaten eggs, milk, oil & vanilla. Stir just till combined. Fill muffin cups 2/3 full. Bake at 350 for 18-20 minutes or till golden brown & toothpick comes out clean. Frost & decorate as desired. Makes 24 cupcakes.

You can always talk about the difference between real and imaginary and how rainbows are a symbol of promise for Christians. February 23 Letter to the PresidentThis is a very easy thing to do to send a message to the new president that the majority of Americans DO NOT support his abortion policies. Here's the idea: Get a red envelope (Now is the time to get one from a valentine card). On the front, address it to:

On the back, write the following message. "This envelope represents one child who died by abortion. It is empty because that life was denied the chance to offer anything to the world. Responsibility begins before conception".
On Thursday, the President said this at the National Prayer Breakfast: "There is no God who condones taking the life of an innocent human being." This would be very appropriate to add to the message.
Put it in the mail, and send it. Then send an email to every one of your friends who you think would send one too. I wish we could send 50 MILLION red envelopes, one for every child who died in our coutry before having a chance to live. Maybe it will change the heart of the president. And don't forget to PRAY!!! Lenten RecipesFISH PARMESAN ¾ c dried breadcrumbs or crushed croutons 3 T parmesan cheese 2 tsp dried parsley ½ tsp salt ¼ tsp paprika 1/8 tsp EACH pepper, oregano, basil 6 pollack fillets ½ c melted butter In shallow bowl, combine crumbs, cheese, parsley, and seasonings. Dip fish in butter, then in crumb mixture. Arrange in 9x13 pan. Bake, uncovered, at 375 for 20-25 minutes. Delicious!
SALMON PATTIES Stir together: 1 can salmon with juice, onion, 2 eggs. Add 16-18 saltine crackers. Fry in butter in frying pan set at 250 degrees. Turn when brown. Add more butter as needed for each batch. Make small patties so they don’t fall apart as easily.
TUNA/CRAB HOTDISH (prepare the night before) (my grandma made this for Good Friday when we visited, yummy!) 8 slices bread, cubed 1 can crab meat, drained 1 c celery, diced 1 green pepper, diced 4 eggs 3 c milk 2 cans tuna, drained ½ c mayo 1 onion, diced Other spices as desired 1 can cream of mushroom soup ½ c milk Shredded cheddar cheese
Butter 9x13 pan, put ½ bread in bottom. Saute onion, celery & pepper in butter. Combine mayo & other spices; add tuna & crab; spread over bread. Put rest of bread cubes on top. Beat eggs and milk, pour on top. Cover & put in frig overnight. Bake 15 minutes at 325. Combine 1 can cream of mushroom soup & ½ c milk, pour on top. Top with grated cheese. Bake for 1 hour. Prayer/Fasting/Almsgiving are the basics of Lent. Have each family member come up with one thing in each category to do for Lent, or if you have young children, maybe have a family activity in each category. For example: Prayer – pray the Stations together twice a week; Fasting – only watch TV/videos for ½ hour/day or 1 hour/day; Almsgiving – save all of the change you receive when you buy something during Lent and send it to the missions.
Lenten Prayer Pots: Give each child a fist-sized ball of clay. You can get air-dry clay at Walmart. Show the children how to make a pinch pot. You can have them decorate the outside with paint or markers or leave it plain. On Ash Wednesday place the pot in a special place, maybe on the dining room table or your prayer table. It will remain empty for a few days. On the 1st Sunday of Lent, place a small heart cut from construction paper in the Prayer Pot to remind them of God’s love for us and that we should show our love for, and be kind to, others. On the 2nd Sunday of Lent, place a seed (sunflower or pumpkin or whatever) in the pot to remind us that God’s love for us constantly grows and that we should try hard to do more for other people. On the 3rd Sunday of Lent, place a rubber band in the pot as a reminder that God always stretches His patience and everyone should do the same for others, even when it isn’t easy. On the 4th Sunday of Lent, place a marble (or a small game piece) in the pot to remind everyone to take turns and share with others in all they do. On the 5th Sunday of Lent, place a band aid in the pot to remind us to help other people when they are sad or hurt. On Palm Sunday, place a tiny piece of the palm you receive at Mass in the pot to remind us that Jesus is our King and we should remember to pray to Him. On Easter Sunday, place a piece of eggshell in the pot to remind everyone that Jesus will always be with us and is always ready to hear our prayers.
Praying the Stations: My children enjoy using their “Station’s Box” when we pray the Stations at home. There is a symbol that they use for each Station and helps them to think about (thus learning to meditate) on each station. Use any children’s Station book or look online for meditations. The following items can be placed in a bag or box. You may think of other good symbols as well! Another neat idea to use while praying the Stations is to put 14 votive candles on your prayer table. Light all of the candles when you begin & after each Station is prayed, blow out 1 candle. At the end of the Stations, the room will be dark, just as the world was dark when Jesus died on the Cross.

My husband has worked 50 hour/weeks for the last 5 years...a couple months ago they took overtime away & so he has been working 40 hours/weeks. A couple weeks ago, they laid off 60-70 people...and starting Monday there will be no third shift and the office staff (including my husband) will only be working 32 hour/weeks.
A couple weeks ago, I was at the public school that is right across the street from where we live and the principal flagged me down & asked if I would be interested in a job helping with a 3rd grader who is in a wheelchair. They needed an aide to help her during the day & to have someone extra in the special ed. classroom. I said no...with homeschooling I just couldn't. Well, when we found out about my husband's hours being cut, I brought my teaching certificate over to the school so they could have it on file so I could substitute teach. The principal caught me again and said the aide position was still open. So...to make an already long story short...I start on Monday! God is SO good! We no sooner lose income than we are offered the opportunity to make it up. With my parents living next door & being able & willing to help out with the girls...it is all working out. I am not totally thrilled with the idea, but realize that right now it must be what God wants me to do since it just dropped in my lap. There are only 3 1/2 months left of school and they have 4 day school weeks, which is great! So my mom will be substituting for me & helping the girls with their homeschooling while I work across the street 4 days/week.
At least I was able to have a little fun shopping for clothes, because of course, I can't wear jeans & sweats which is my normal, everyday attire when I'm home. I have dresses/skirts for church, but only a couple that I could wear while working. I hope to be able to order a couple more skirts to wear for work...then I will be closer to my goal of wearing only skirts/dresses all the time as well
So we praise & thank God for His care for us! This will get us through what could otherwise be a tough time. Hopefully the economy will improve, and if not, He has proven His care for us, so we don't need to worry! Even if things get even tougher, He will provide one way or another. We pray for all those who are being hit with these tough economic times and pray that it brings about the conversion of hearts so needed in our world today. Oreo TrufflesThese are SOOOOOO good! Several people made them over CHRISTmas and just tried making them today. I read several different reviews because I heard they were tricky and a bit of a pain...so I got some good tips and they really are pretty easy to make! Makes 40-50 truffles.
1 lb. Oreo cookies (3 sleeves)
8 oz. cream cheese, room temperature
1/2 tsp vanilla (optional...I didn't try it this time; you can also use mint or other flavorings if you're daring!)
Baker's chocolate squares (milk chooclate, semi-sweet, white...whatever flavors you like best...Baker's works MUCH better than
melting chocolate chips)
1. Using a food processor or blender, grind the cookies to a fine powder. With a mixer, blend the cookie powder, cream cheese, and vanilla until thoroughly mixed (there should be no white traces of cream cheese).
2. Using a small cookie scoop, make balls of the mixture; then roll with your hands if necessary to make rounder. Place on wax-paper lined cookie sheets.
3. Refrigerate for an hour. You can also put them in the freezer if you want them to get cold faster.
4. Melt Baker's chocolate, in a small microwave-safe bowl, in microwave for about 1 minute. Stir till all chocolate is melted. You do not want the chocolate to be too hot, so stir till the chocolate is melted instead of melting it completely in the microwave. Use only 3-4 squares of chocolate at a time so that it stays melted enough to coat the oreo balls easily.
5. Dip the balls in chocolate, using a spoon & fork. Drain the ball on the fork and then place on the wax paper lined cookie sheet. Drizzle the opposite color of chocolate over the balls for a professional look (if you dip the balls in white chocolate, drizzle with milk chocolate; if you dip the balls in milk chocolate, drizzle with white chocolate).
6. Store in airtight container in the refrigerator.
You can also roll truffles in various toppings instead of dipping in chocolate: chopped nuts, chocolate sprinkles, candy sprinkles, colored sugar, powdered sugar, etc.
Another option, use mint flavored oreos; or peanut butter oreos & 2-3 regular sized Butterfinger candy bars chopped (this is one I want to try!); or NutterButter Cookies. There are as many options as sandwich cookies
Don't eat too many...they are very rich! But SO yummy!!!

I have updated my resolutions...many of them are basically the same, but those are still the things I want to continue to work on. The exercising may not happen till spring...but oh well! Other things are just more important...like spiritual well-being. I haven't blogged for quite awhile...I'm thinking one of my entries is missing though, because I thought I had blogged more recently. I have completed the college courses necessary to renew my teaching certificate and have sent in the paperwork to renew my certificate with the state. When I receive that back I will start subbing at some area schools. We'll see how that works out with home-schooling. My parents have moved in next door to us, so my mom can "sub" for me
I pray your new year is filled with blessings and that the worsening economy does not affect you & your families too much...please pray the same for us! I know God is in control, but sometimes it's still a little scary not being able to see the whole picture! But I know it will all work out & He will care for us.

It has been awhile since I've blogged...life has been busy around here. I was taking 2 self-paced college classes to renew my teaching certificate and had to have those completed by the end of November. I just checked my grades yesterday & got A's in both classes
